Ricetta: 500 g di radicchio di foggia 10 gr di funghi porcini secchi 2 tuorli 50 gr di fontina grattugiata 50 gr di parmigiano grattugiato 30 gr di burro ½ bicchiere di marsala ½ cipolla tritata 20 crespelle per la besciamella 80 gr di burro 80 gr di farina 600 gr di latte sale pepe e noce moscata Per le crepes 2 uova un bicchiere di latte 3 cucchiai di acqua fredda 75 g di farina sale burro o margarina. Procedimento Stufare in burro la cipolla tritata insieme con i funghi, precedentemente ammorbiditi e tagliuzzati, aggiungere il radicchio lavato e tagliato a piccoli pezzi, far cuocere per 10 minuti. Quando il radicchio sarà cotto, ridurlo in piccoli pezzi. Nel frattempo preparare la besciamella e lasciarla intiepidire, amalgamare i tuorli d&#8217;uovo al radicchio la besciamella e la fontina e il parmigiano, mettere sul fuoco per pochi minuti per far amalgamare il composto. Preparare le crespelle: sbattere le uova con l&#8217;acqua ed il latte. Aggiungere poi la farina ed il sale e sbattere finché la pasta sarà spumosa. Lasciarla riposare per mezz&#8217;ora Imburrare una pirofila, disporvi uno strato di crespelle e versarvi un leggero strato di composto e continuare cosi fino a terminare le crespelle, che andranno spennellate di burro e parmigiano. Una tavola lunga un secolo rappresenta una carrellata di argomenti culturali e gastronomici che insieme formano uno dei tanti mosaici possibili della grande storia della cucina italiana del XX secolo. La cucina e la tavola, oltre ad essere il punto di partenza e quello di arrivo degli avvenimenti culinari, sono i due ambiti nei quali Ballarini e Richard Ginori svolgono le loro attività ultracentenarie. La storia della cucina italiana del 900 ha le proprie radici profonde nei primi piatti di pasta, riso e nelle minestre in genere. E&#8217; una cucina che ha saputo creare un mondo di incomparabile ricchezza e varietà partendo da presupposti di profonda e perdurante povertà. A tarantella is also a song that can be played by instrumentalists. Sometimes the word used for the song is taranta (&#8220;tarantella&#8221; is in fact a diminutive dialectal form for &#8220;tarantula&#8221;, a common kind of spider).</p>
